Our 4th vintage Sauvignon Blanc was crafted from a Single Vineyard in Yountville- Napa Valley. This vineyard sits on the valley floor on the eastern edge of the Yountville appellation just as Stag’s Leap rises up behind it. The vineyard is sustainably farmed and vertical trellising, allowing for just the right amount of sunshine to reach each grape cluster to avoid pyrazines, the green bell pepper flavor we work hard to avoid.
2019 Vintage
A beautifully wet winter set up a nice crop for 2019. Spring was later than usual due to the cool wet weather, but summer was warm and uneventful with only one heat spike over 100 degrees, making for ideal conditions for ripening sauvignon blanc. Grape maturity and the natural sugar accumulation in the grapes progressed at the same pace giving us perfect fruit from which to make this exciting wine.
Tasting Notes
Perfect Sauvignon Blanc clusters were pressed, settled and allowed to start fermentation with native yeast. We kept the fermentation cool and long, lasting over twenty-four days. Malo-lactic fermentation was immediately arrested and the wine went to two concrete eggs. The remainder went neutral French oak for three months of aging in its own lees.
The wine has a light bright straw color with aromas of fig, dried hay, bay laurel and pear. This Sauvignon Blanc completely fills the pallet with mouth-watering savory flavors of crisp acidity, wet stones, fig and guava. The freshness keeps you going back for more and the extraordinary long finish is all bright just picked summer fruits.
